This is not possible without editing in source. In theory a server should run 24hrs a day ... soon it would not restart.

Like in the global tibia, when there is update, there is "clean reset"

In order to do such a thing, you would have to save all items available on the map in your database (as house items are kept saved, look into that), which would require a lot of extra space and this is not something you might be looking for. On the other side, as darkmubr said, you could remove the server save option and not do any restart at all.
