Questions:
  1. Which is faster and more reliable?...
  2. Which would be better to host a server with?
 
I have read articles obviously..I am looking for personal experience with these two processors.

More cores = better the processor. You will get more processing speed from the Quad Core.
 
i7 is also quad core ..

however since you mentioned entry-level CPU models, Core 2 Extreme might perform slightly better than i7

I used to do that JDB, it will probably heat up and restart sometimes, if it's 24/7
My experience.

ps : not if you have great refrigeration system.
 
You're gonna _buy_ a laptop to host a server? That's stupid...better off, let someone here construct something for u, and if size is a matter, there is mATX :p
 
put it in a nearby freezer

Heated ice turns to water which destroys the computer. Having it in a freezer would be a slowly but surely death to the computer. Also, some parts on a computer is much warmer than other parts. (e.g compare the heat from a RAM brick to a processor).
