My server keeps crashing after x min. It can be everything from 15min to 3h and it crash. I removed the npc files from it and it didnt crash. But i wonder what about npcs that can make a server crash?

What server are you using? My guess is that your scripts are either bad written, ex. never ending loops or that your source code is bugged.
If you are running printers package I can recommend you to rewrite all globalevents and creaturescripts, my server uses alot less memory now when ive rescriptet almost the full datapack.
