How limited will my server be if I hire a VPS with 8 GB ? 100 mbps etc..

Depends on the map and complexity/amount of scripts.

Performance will be alright but you may suffer a bit with memory problems if you want to go with anything bigger.

Depends on client. 8.6 should do it. I dont know how much the map has expended to the last client.
