they will take away the dedicated server/VPS & reinstall it (delete everything that's on it & install a fresh new system)

Depends. On SoYouStart they gave me like an extra 3 days to pay then they just changed the ip of the server and gave it to someone else. Some maybe give you extra days or do it the same day but its pretty much just as ghettobird said.
