you can if you know php, if you don't know a shit, then use sha1, btw sha1 is more secure than plain, so I recommend sha1

Not really sha1 can still be edited it cant be read but it can be edited so kinda pointless. but I could be wrong... lmao

You want to change back into plain password?! I wouldn't do that if i were you, SHA1 is secure, but even that could be rainbow cracked. Rainbow table - Wikipedia, the free encyclopedia

If you want to manage it, just change the password of the account and store the SHA1 hash, and then just change it back after.
