Why i can't change layout in Gesior SMS Shop?

Look here : regnumots.pl. In Upominki section, i want to change background, yellow to brown, or to some texture.

OPen your shopsyset.php and search for:

bgcolor="gold"

In gold place you can change it to whatever you whant, you can also use color numers RGB like "#93488"...

Sorry to burst your bubble, but changing the background of table/row is made with HTML/CSS. Also, you are not supposed to leave it blank, but delete whole bgcolor="" definition, else your site will just get more errors/warning and wont be valid (validator.w3.org).
