Ubuntu is based on Debian so they are kinda the same

Fedora is based on Red Hat, so it's a little bit different (Not much tho)

Personally i use Ubuntu for server and Fedora for Desktop

I would personally use Debian for a server. Thats because I'm using it quite long time and haven't got any problems with it. But its up to you what you choose, its just my little suggestion ; D!

PS. If you decide to start with Debian, use version 5.0 (lenny)
