Death Note and Fate/Stay Night were both awesome..
A few other good ones would include Cowboy Bebop, The Melancholy of Haruhi Suzumiya and even InuYasha

GTO is best. Somebody might think the start episodes are bad and quit. But it really gets better after every episode.

Death Note is a legendary and out of any anime related league.

Naruto and Bleach got way to many fillers.

One Piece - Bad start, very good mid episodes, but lately pretty bad episodes.
