Can someone explain to me how a dedicated server work?

Well...I know how it works, just what to do when you buy it. Just transfer the .sql file to it? or what? I never really understood that.

First of all what kind of OS do you want in your dedicated Linux or Windows? If Windows there are tutorials how to setup a server from start to end. If Linux as can be a bitter harder if you never have use SSH/Putty before. But there are tutorials for that too how to do it!

But you before you transfer the .sql file. You need to setup phpmyadmin and create a database!
