You have different ways to finish it, just choose one
You can split your roof up, like this:
or you can just simply use multiple floors
For the last picture, you can do two things to fill in the gaps you'll have left, you can or do:

The room you'll have left if you go with the second option, you can use it for an attic or some storage room, or whatever you want.
