there aren't any. the only data packs there are are filled with bugs.
just create something yourself

If you're wondering why no one is giving any recomendations, stop to think how "good" and "easy" are relative.

That said, i'd use the Cip 7.7 released files. It's a good full and stable, ready and really easy to run distribution if you know what you're doing.

Locking this since you should have understood that there is no "bug free ready to run" server that you can download for free.
Either do as @Static_ said and create your own or download a datapack and try to fix the bugs.
