Need an advice on possible solutions TFS 8.1 - possible downgrading

Hi everyone. I am thinking of trying out hosting a server again. I want to host 8.1 and I wonder what would you, experienced TFS devs, suggest me to do?
Should I downgrade latest TFS to 8.1 or use older versions? I work as a software engineer, but my c++ knowledge got a bit rusty (pun intended).
