is it possible to update 8.11 full server (working 100%) to 8.57 and working as 8.11 without bugs?

If you update from 8.11 to 8.57 you will probably have broken scripts. If you spend time on your server and actually fix the scripts, yes you can go from 8.11 to 8.57.
