It does backup the whole otserv database folder or just few files?, because i saw just few files on few backups folders, or does this update only "most recent updated tables" to take less disk?

Nothing fancy about the backup, it justs copies the files you select.

They work fine for me, test again, they maybe just messed around earlier.
