First, to hide the sample characters, you need to go on database and change the column DELETED of the character you want to hide from 0 to 1.
It will hide the character on highscores and dont have problems to create new characters.

To change the color of the npc name???? what?
I think that one real tibia client you cant change the npc name color, you can set the health of the npc, example, npc with healthmax 100 and healthnow 50, it will be yellow, but change the color of npc name I think that its possible only with otclient or one custom client.
