You need to do them with 2 people or catch many caterpies and let them kill the Bellsprout, then you are able to kill them easier. And if you get in trouble I use a Magikarp and let it stay their while I run away.

Btw you need like 70~/ 50~ pokeballs to catch a Bellsprout (not unique pokeballs)
